Welcome to the "Snowed-In Diabetic Recipes" Edition of the Carnival of the Recipes.

Kathee Austin and Bill Austin are snowed in up in the White Mountains of Arizona and are operating over a WiFi link at a resort up in the wilderness around Showlow Arizona.

We went up to see our favorite Country Western band, the Doo-Wah Riders play at the Hon-Dah Resort Casino and Conference Center. This is the same place we went for our anniversary in June but it is a totally different experience today.

The drive up here usually takes 3 1/2 or 4 hours. It rained most of the way to Payson and right after we left Payson, it began to snow. Soon thereafter, the traffic stopped completely. An 18 wheeler truck was unable to make it up a hill and kept sliding back down blocking traffic both ways for over five miles. The trip took over six hours.

Today, we are supposed to drive back home but the roads are icy and it is snowing hard so it does not look like the roads will be open.

UPDATE: There are accidents on the roads to Globe AZ and Payson and the Highway Patrol (Department of Public Safety) is recommending that no one try to get out of here today so we are staying for at least another night. Hopefully, it will stop snowing sometime tonight and they can clear the roads early tomorrow and we can make the long trek home.

ADDITIONAL UPDATE: We left Showlow at about noon on Monday, driving out by way of Payson and arrived home safely at a little before five. The roads were clear of ice and snow and the weather was crisp and clear with blue skies and fluffy clouds.

PS: while we were snowed in up in the Pinetop / Lakeside / Showlow area, Phoenix and North Scottsdale were having a snowstorm of their own, an extremely rare happening.

IB at The Porch Light submits the recipe below for

CHOCOLATE FUDGE



2 c. sugar or Splenda
6 T. Carob powder
2 T. butter
2/3 c. milk
Pinch of salt
1 t. vanilla

Combine sugar, milk, salt and carob powder. Bring mixture to boil, not stirring. Boil to soft ball stage (234-238°F). Add butter and vanilla and cool without stirring 'til butter melts. Beat mixture 'til creamy and thickening and shine disappears. Pour into well-buttered pan. Cut into squares.

If you want nutty fudge, add 1/2 c. chopped nuts when you add the vanilla.

Enjoy your guilt-free "chocolate" indulgence!

Hi, there! I realize this is really late, but I just found out about this post. Thank you for adding my recipe for Fudge even though it was not in the proper format.
