Garlic-Lime Chicken Drumettes with Chipotle Mayonnaise - 6g Carbs, 3g

Drumettes, also called party wings, are the meatiest part of chicken
wings. They look like miniature drumsticks. They're just the right
size to serve as appetizers for a party. The marinade gives these
drumettes lots of flavor in a relatively short amount of time.

CHICKEN AND MARINADE
6 garlic cloves, minced
2 tsp grated lime peel
2 tsp kosher (coarse) salt
2 tsp dried oregano
2 tsp cumin seeds, toasted, crushed*
1/2 cup lime juice
1/3 cup olive oil
24 chicken drumettes or party wings

MAYONNAISE
1 cup mayonnaise
1/2 cup light sour cream
1 Tbsp Dijon mustard
2 to 3 chipotle chiles in adobo sauce, drained, finely chopped**
1 Tbsp adobo sauce

GARNISH
2 avocados, sliced

1. Place garlic, grated lime peel, salt, oregano, crushed cumin seeds,
lime juice and oil in nonreactive shallow pan large enough to hold
chicken in one layer. Add chicken; turn to coat completely with
marinade. Cover and refrigerate at least 2 hours or up to 4 hours.

2. In small bowl, stir together all mayonnaise ingredients. Refrigerate
30 minutes.

3. Heat grill or broiler. Remove chicken from marinade; discard
marinade. Place chicken on gas grill over medium heat, on charcoal
grill 4 to 6 inches from medium coals or on preheated broiler pan
4 to 6 inches from broiler. Grill or broil 12 to 14 minutes or
until browned and juices run clear, turning once. Serve with
avocado slices.

TIPS
*Toast cumin seeds in dry skillet over medium-low heat, stirring
frequently, 1 minute or until slightly darkened in color and aroma
is toasty. Crush with mortar and pestle or flat side of chef's knife.
**Chipotle chiles are dried, smoked jalapeno chiles. They come dried,
pickled or canned in adobo sauce. Look for them in the Latin section
of the supermarket.

1/4 cup diced celery

1/2 tsp prepared Dijon-style mustard

1. In a small bowl, mash tuna with juices from can. Add celery,
dill, parsley, chives, mayonnaise, yogurt, and mustard; mix well.

Lynne says, "A melon salad is not a typical opening to a meal in Italy. I
certainly didn't expect it when I Stayed at Le Frise, a guest farm in the
mountains of northern Lombardy. . . Emma dresses chunks of melon with black
pepper, vinegar and olive oil. She presents the melon on a bed of pale green
curly endive and snips dark green chives over the salad at the last moment.
Few things taste better with fresh goat cheese."



Half of a 2 1/2 to 3 pound ripe cantaloupe, seeds removed

Several pale green leaves from the center of a head of curly endive

Salt and freshly ground black pepper

2 teaspoons fruity extra-virgin olive oil

2 teaspoons white wine vinegar

2 teaspoons snipped fresh chives or scallion tops

With a melon baller, scoop out 1-inch balls from the melon and turn into a
medium bowl. Line an 8-inch white serving plate with the endive greens.

Sprinkle the melon with salt and pepper to taste. Gently toss with the olive
oil, then the wine vinegar. Spoon onto greens, scatter the chives over the
melon, and serve.

Make 4 servings.

Crunchy Banana-Colada Bread

The crunchy coconut and banana-nut topping adds a new twist to this
holiday quick bread.
 
3/4 cup sugar
1/2 cup unsalted or regular butter, softened
2 eggs
1 cup mashed very ripe bananas (2 medium)
1 (6-oz.) container Yoplait® Original 99% Fat Free Piña Colada
Yogurt
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
4 Nature Valley® Banana Nut Crunchy Granola Bars (2 pouches from
8.9-oz. box), coarsely crushed*
1/4 cup flaked coconut
 
Heat oven to 350°F. (If using dark pan, decrease oven temp to
325°F.) Generously grease 9x5-inch loaf pan with shortening or spray
with cooking spray. In large bowl, beat sugar and butter with electric
mixer on medium speed until well blended. Beat in eggs, bananas and
yogurt.Add flour, baking soda and salt; beat until combined. Stir in 1/2
cup of the crushed granola bars until well combined. Pour batter into
greased pan.In small bowl, mix remaining 1/4 cup crushed granola bars
and the coconut. Sprinkle evenly over batter in pan; press in
lightly.Bake at 350°F. for 60 to 70 mins or until toothpick inserted
in center comes out clean, covering with foil during last 15 to 20 mins
of baking to prevent excessive browning. Cool in pan on wire rack 15
mins.Remove loaf from pan; place on rack. Cool completely, about 2 hrs.
Wrap tightly and store in refrigerator.

Apple Butter (diabetic from ADA)

5 lb apples (try Pippin, Granny Smith, or Macintosh)
2 cups water
1 cup orange juice
2 cups unsweetened apple cider
2 tsp cinnamon
1 tsp cloves
1 tsp allspice
1/2 tsp nutmeg

1.Peel, core, and thinly slice apples. Put the apples, water, orange juice, and apple cider in a saucepan and simmer for 20 to 25 minutes. Remove from heat and puree the apple and liquid in a food processor or blender until the mixture is fairly smooth.

Preheat the oven to 325 degrees. Pour the apple mixture into a large baking pan and bake, uncovered, for about 1 hour, or
until reduced to half. Stir occasionally. (It's best to have a baking pan with a large surface so the moisture can evaporate.)

Add the spices and stir to blend. Lower the oven temperature to 250 degrees and bake the mixture for 3 hours until very dark and thick. Stir frequently to prevent sticking. Place in hot, sterilized Mason jars. Cool and store in refrigerator.

Mushroom Hamburgers
Serves 4

2 tsp olive oil
1/2 cup finely chopped red or yellow bell pepper
1/4 cup finely chopped onion
2 tbsp finely chopped carrot
2 tbsp finely chopped celery
2 garlic cloves, finely chopped
2 cups finely chopped mushrooms
10 oz extra-lean ground beef (10% or less fat)
1 tbsp steak sauce
Salt and freshly ground black pepper to taste

In a 10-inch nonstick skillet, heat oil; add bell pepper, onion, carrot, celery and garlic. Saute, stirring, until onion is translucent, about 8-10 minutes. Add mushrooms; raise heat to high and saute, stirring, until mushrooms brown and liquid evaporates, about 8 minutes. Allow mixture to come to room temperature.
Preheat broiler. Combine mushroom mixture with ground beef, steak sauce, salt and pepper. Form into 4 hamburgers. Spray broiler rack with nonstick cooking spray. Broil burgers on rack 3-4" from heat, 3-4 minutes on each side for medium-rare or to your preference.

Diabetic Chicken Parmesan


26-oz jar seasoned tomato sauce 1 ea ---
boneless, skinless chicken breasts --- 20 oz
shredded mozzarella cheese, part skim 1/2 cup ---
grated Parmesan cheese 1/2 cup ---

Preheat the oven to 350 degrees F. In a 9x13-inch baking pan or large casserole dish, spread half of the tomato sauce. Place the chicken n the sauce, then pour the rest of the sauce over the chicken. Sprinkle the mozzarella cheese on the chicken, then sprinkle on the Parmesan cheese. Cover and bake until bubbly and cheese is lightly browned, 30 minutes.

Black-Eyed Pea Soup (2 PTS)

Serving Size

12 ounces black-eyed peas (about 2 cups)
2 medium potatoes -- peeled & diced
3 stalks celery -- slices
3 tablespoons soy sauce
1 medium onion -- chopped
2 cloves garlic -- diced
1/4 teaspoon pepper
1 teaspoon basil
4 teaspoons fresh dill

Rinse black-eyed peas well. Place in large pot and cover with
water. Soak overnight. Drain.
To drained peas, add 7 cups of water and rest of ingredients. Bring
to a boil for 2 minutes.
Reduce heat to medium low. Simmer 1 to 2 hours or until beans are
tender. Stir occasionally, mashing peas and potatoes against sides
of the pot to thicken soup.
Per serving: 146 cals; 8g protein; 28g total carb; 0mg chol; 7g
fiber; 326mg sodium; 1g fat (4% of calories from fat).

Diabetic Recipes - Diabetic Bran Bread

3 tablespoons shortening
3 tablespoons brown sugar replacement
3 tablespoons molasses
1 teaspoon salt
1/2 cup bran
3/4 cup water, boiling
1 package dry yeast
1/4 cup water, warm
2-1/2 cups flour
Margarine, melted

In a large mixing bowl combine the shortening, brown sugar
replacement, molasses, salt, and bran. Mix well. Add the boiling
water. Stir to blend. In a small bowl soften the yeast in warm
water. Allow to rest for 5 minutes. Add the yeast to the bran
mixture. Add 1-cup flour at a time, stirring well after each
addition, until a soft dough is formed. Knead gently on a floured
surface for 10 minutes. Shape the dough into a loaf.
Place in a greased 13 x 9 x 2-inch loaf pan. Cover and allow to rise
in a warm, draft-free place for 2 hours. Punch the dough down; and
let rise in a warm, draft-free place for 1 hour. Bake at 325-degrees
for 50 to 55 minutes. Remove to a wire rack and brush lightly with
the melted margarine. Yields: 1 loaf at 68 calories per 1 slice.

All-Day Crockpot Beef Diabetic Recipe

1 1/2 pounds Beef, *stew or roast beef
1/2 teaspoon black pepper
2 garlic cloves, minced
1/2 package onion soup mix
2 teaspoons Worcestershire sauce
1 teaspoon A-1 steak sauce
3 large carrots, sliced
2 large celery stalks, sliced
1 medium green bell pepper, chopped
1 medium onion
1/2 cup water
1/2 cup tomato juice
* Use any cut of beef roast desired.

Cut beef into serving-sized portions. Brown beef in a bit of vegetable oil,
in a large skillet. Meanwhile, slice onion and separate into rings. Dice the
peeled carrots, dice the celery and slice the peppers into thin strips or
circles. Place these into the bottom of crockpot. Sprinkle the beef pieces
with fresh ground black pepper, minced garlic and the onion soup mix.
Place on top of the vegetables. Mix the steak sauce and Worcestershire
sauce in a small bowl with about 1/2 cup water and 1/2 cup tomato juice.
Pour this over the meat. Turn the crockpot to high for 30 minutes, then
turn to low, cover and cook for 7-9 hours.

Freezer directions:
Cut and brown beef as directed above, then cool.
Place beef into a large zip baggie. Add all other ingredients to baggie,
label and freeze for up to six months. The day before you wish to cook
this, remove from freezer and thaw overnight in refrigerator, then place
into crockpot next morning and cook as directed above.

"This decadent trifle is made without sin, by using fat-free
and sugar-free ingredients.

Original recipe yield: 12 servings

1 (8 oz) package chocolate sugar-free, low-fat cake mix
(such as Sweet 'N Low)
3/4 cup water
1 (1 oz) box chocolate sugar-free, fat-free instant pudding mix
2 cups fat-free milk
1 (16 oz) pkg frozen no-sugar-added pitted cherries
2 drops red food coloring
2 cups fat-free frozen whipped topping, thawed
Sugar-free chocolate curls (optional)

1. Prepare cake mix according to package directions, using
3/4 cup water. Let cake cool in pan; remove from pan, cut
into cubes.

2. Prepare pudding mix according to package directions, using
2 cups fat-free milk; chill at least 30 minutes.

3. Thaw cherries, reserving 1/4 cup juice. Combine cherries,
juice, and food coloring.

4. Place half of cake cubes in a 3-quart trifle bowl. Spoon
half of cherries over cake; spread 1 cup pudding over cherries,
and top with half of whipped topping. Repeat layers. Top with
chocolate curls. Cover and chill at least 8 hours.

grated lemon peel 1 tsp ---
(15 oz) diced carrots, undrained 1 can ---

Preparation Instructions


1.. Heat oven to 350 degrees.
2.. Grease loaf pan, 9 x 5 x 3 inches.
3.. Finely crush cereal. (Place cereal in plastic bag or between sheets of waxed paper; crush with rolling pin. Or crush in blender or food processor.)
4.. Stir together flour, sugar, baking powder, pumpkin pie spice, salt and baking soda in large bowl. Stir in cereal and walnuts.
5.. Beat remaining ingredients until well mixed. Stir into cereal mixture just until moistened. Pour into pan.
6.. Bake about 1 hour and 10 minutes or until toothpick inserted in center comes out clean.
7.. Cool 15 minutes; remove from pan. Cool completely before slicing.

- 2-1/2 cups fat-free, reduced-fat chicken broth
- 3 cups cooked white navy beans or cannelini beans
- 1 cup white corn (frozen or fresh)
- Salt and pepper to taste
- Garnish: 1/4 cup minced parsley

DIRECTIONS

In a large stockpot, over medium-high heat, heat the oil.
Add the onion, garlic, and green pepper and saute for
3-4 minutes. Sprinkle the flour and cumin over the onion
mixture and cook 1 more minute.

Add the remaining ingredients except the parsley and
bring to a boil. Lower the heat to simmer and cover,
and cook for 30-35 minutes.

Diabetic Recipes - Diabetic Friendly Vegetarian Pizza

This recipe yields 2 x 12" thin crust pizzas with 8 slices each.

Dough:
2 cups whole wheat or spelt flour
1 pkg (7g) active dry yeast
1 tbsp olive oil
1 tbsp white sugar
3/4 tsp salt
1/2 to 3/4 cup hot water

Toppings:
400g firm mozzarella cheese (partly skim milk/low fat)
1 cup chopped/diced red bell pepper
1 cup chopped/diced green bell pepper
3 diced onions medium
2 medium tomatoes, sliced
1 cup mushrooms sliced (optional)
1 can tomato paste
herbs to taste

Prepare the Dough:

1) In a food processor mix flour, sugar, yeast and salt.

2) Slowly blend in olive oil and hot water. Dough should not be too sticky!

3) Set dough aside for 10-15 mins.

4) Lightly oil 12" pizza cooking sheet

5) Cut dough in half and roll into approximately 12" circle. Put into oiled pizza sheet, making sure there are no holes in the dough.

6) Spread 1/2 can tomato paste on each pizza and herbs. Add rest of toppings. Bake at 275 degrees for 20-25 mins.

7) Let cool and eat.


Each slice (1/8th of each pizza) will yield 1 starch, 1 protein and 1-2 fat (depending on cheese).

Diabetic Recipes - Ranch Salad

Ranch Salad
Cooking Light June 99

1 cup low-fat buttermilk
1/2 cup bottled medium salsa
3 tbsp light mayonnaise
2 tbsp chopped fresh parsley
1 tbsp lemon juice
1/2 tsp sugar
1/2 tsp dry mustard
1/4 tsp salt
6 cups torn iceberg lettuce
1 cup cherry tomatoes, halved
3/4 cup sliced radishes
3 tbsp sliced green onions

Combine the first 8 ingredients in a blender; process until smooth. Combine lettuce and remaining ingredients in a large bowl. Add 1 cup dressing; toss well. Serve immediately.

Note: Store remaining dressing in an airtight container in the refrigerator for up to 2 weeks.

November is National Diabetes Awareness Month in the United States and we bring you this very special Carnival of the Recipes with a theme of Diabetic Recipes.

In late October we promoted and sponsored "Rip's Bad Ride Arizona III" - a motorcycle ride to raise money for Diabetes Research and the American Diabetes Association.

Diabetic Recipes - Three Bean Salad Recipe

Three Bean Salad
Serves 8 (3/4 cup)

2 cups (one 16-ounce can) cut green beans, rinsed and drained
2 cups (one 16-ounce can) cut wax beans, rinsed and drained
10 ounces (one 16-ounce can )red kidney beans, rinsed and drained
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1/2 cup Kraft Fat Free Italian Dressing
Sugar substitute to equal 1 tablespoon sugar

In a large bowl, combine green beans, wax beans, kidney beans, onion, and
green pepper. Add Italian dressing and sugar substitute. Mix well to
combine.

Cover and refrigerate for at least 30 minutes. Gently stir again just
before serving.
Each serving equals:

Diabetic Friendly Chocolate Cheesecake

Servings: 12

1 (5.25 ounce) package sugar-free chocolate graham crackers, crushed
1/3 cup reduced-calorie margarine, melted
1/4 teaspoon ground cinnamon
Cooking spray
1 (.25 ounce) envelope unflavored gelatin
1 cup fat-free milk
2 1/2 (8 ounce) packages 1/3-less-fat cream cheese (Neufchatel), softened
2 teaspoons vanilla extract
14 tablespoons granulated sugar substitute with aspartame (such as Equal
Spoonful)
1/4 cup unsweetened cocoa
5 (0.6 ounce) sugar-free chocolate wafer bars, coarsely chopped

1. Combine first 3 ingredients, stirring well. Press into bottom and 1 inch
up sides of a 9-inch springform pan coated with cooking spray. Bake at 350
degrees for 8 minutes. Remove from oven; let cool on a wire rack.

2. Sprinkle gelatin over milk in a small saucepan; let stand 1 minute. Cook
over low heat, stirring until gelatin dissolves, about 2 minutes. Let cool
slightly.

3. Beat cream cheese at medium speed of an electric mixer until creamy. Add
vanilla, beating well. Add gelatin mixture, beating until smooth. Add sugar
substitute and cocoa; beat just until blended. Pour mixture into prepared
crust. Cover and chill at least 3 hours or until set. Before serving, top
with chopped wafers.
